Behind it is a chorus of red fruit; the oak contributes spice of nutmeg, licorice, and a vanilla bean folded into the red and black berries. Polished and modern. The vineyard was certified organic under his father\u2019s reign in 1971. Interestingly, all of the estate\u2019s wines are vinified the same way: minimal sulfur, fermentation with wild yeasts, slow and gentle extraction, up to 10 days of cold maceration. The wines are aged in French oak from the Troncais and Vosges forests, never more than 30% new each year.
