Valentin Leflaive's Champagne Blanc de Blancs CV|17|50 is composed exclusively of Chardonnay grapes harvested from vineyards over 45 years old in the renowned Côte des Blancs. These grapes, once selected from their plot, are vinified separately. The first fermentation takes place in stainless steel tanks with a 30% of vin de réserve aged in second-hand barrels of the best Burgundy wine cuvées. Resting period of more than 42 months on its own yeasts and a dosage of 5 g/l-Extra Brut- for this bright, fresh and mineral Champagne Blanc de Blancs.
