The grapes were hand-harvested, cold-macerated whole bunch for 12 hours, gently pressed, and fermented with wild yeasts in steel tanks. 300 and 600 liter French barrels were used, and the wine was aged in the same tanks on fine lees for 6 months. The final wine was blended, lightly clarified with bentonite, and bottled unfiltered.
