They purchased their property in Saint-Lambert-Du-Lattay in 1999 and have 16 hectares of vines, comprised of several different plots. They work with winemakers Fran\u00e7ois Chidaine and Jo Pithon.<\/p>\n<p style=\"text-align: center;\">They have always farmed organically, working the soil and returning weeds to the ground where they nourish the microorganisms that are essential for plants to extract nutrients from the soil.<\/p>\n<p style=\"text-align: center;\">Their grapes are hand-picked, with the whites pressed immediately and the reds macerated for 2-3 weeks before pressing. The still wines are matured in wooden barrels of varying ages, which are reused for several years.
