The average age of the vines is around 40 years across the Domaine. Christophe typically retains between 20 and 30 tsp of stems for his fermentations—excluding the Bourgogne Rouge, which is completely destemmed—and punches down the vines during fermentations to promote flavor development. He generally uses between 15 and 30 tsp of new oak barrels, except for the Corton-Charlemagne, Bourgogne Rouge, and Musigny, which ferment and age in used barrels.
