Prized for its deep, flavorful Pinot Noir reds, Mercurey is the largest and most important village in Burgundy's Côte Chalonnaise. Most of its vineyards are located on the hillsides or extend along the aptly named "Golden Valley." This valley, protected from the humid, cool air channeled at lower altitudes, is ideal for ripening Pinot Noir. Mercurey follows strict yield standards, similar to those of the Côte d'Or villages, which promotes the development of deep, full, concentrated Pinot Noirs with good aging potential. In its youth, a dense and rich structure supports flavors of ripe strawberry, raspberry, and cherry. With aging, notes of undergrowth, tobacco, and cocoa are perceived.
