Peiragal is an old dialect word that identifies gently sloping hills composed of very compact clayey limestone and large stones. This type of soil limits the amount of rainwater that is absorbed, causing the roots to grow deeply in search of moisture that then rises by capillarity from the lower layers. As a result, the vine produces loose clusters of berries and therefore a highly structured, moderately acidic wine with a balanced alcohol content with discreet and delicate tannins.
