Chave Selection is not just any wine. Each plot is vinified separately at its own pace, and the grapes are transported in 12kg baskets to maintain their freshness. Little machinery is involved in this process, and once in the winery, gravity pressing, local yeasts, and natural fermentation do the rest. Even the bottling process avoids filtering, ensuring a lively, minimally intervening grape, thus producing a superior-quality product.
