The Gahier family has lived in the Jura since 1525, and Michel lives just off the main square of Montigny-les-Arsures, charmingly known as "The Trousseau Capital."
Gahier's home, Montigny-les-Arsures, is known as the "Capital of Trousseau" and arguably produces the most exciting, complex, and dynamic interpretations of the grape variety in the entire Arbois appellation. Gahier's viticulture is organic; yields are fairly low (an average of 30 hectoliters per hectare). There is a cold maceration period followed by a cuvaison of approximately one month, with initial pigeage. The wines, both white and red, are bottled unfiltered.
