The Gerbais family estate is located in the village of Celles-sur-Ource. The soils are Kimmeridgian, although there is an area where the mix of limestone and clay is almost identical to that of the Côte d'Or. His family has farmed organically since the 1990s, but when Aurélien took over, he brought Lamy's agricultural obsession with him, further elevating the estate's standards.
