Pierre-Yves Colin-Morey owns vineyards at several premier sites in Saint-Aubin and Chassagne-Montrachet, including Chatèniere, Champlots, Remilly, Chenevottes, and Caillerets. In addition, the estate sources grapes for winemaking from several high-calibre vineyards, notably Bâtard-Montrachet and Corton-Charlemagne. While the estate primarily focuses on producing exceptional Chardonnay, it also produces a smaller amount of Pinot Noir from Saint-Aubin and Santenay. In the winery, Pierre-Yves Colin-Morey avoids battonage, instead favoring prolonged contact with the lees and barrel aging. The wines are bottled unfiltered and often unfined, showcasing the pure expression of the vineyards and the winemaker's meticulous craftsmanship.
