IWA 5 Assemblage 4 is the new and exclusive sake created by Richard Geoffroy, who was the prestigious winemaker of Dom Pérignon champagne for 28 years.
Geoffroy successfully combines his knowledge of wine blending with his passion for Japanese culture. Through a rigorous selection of three rice varieties from two different origins, five yeast strains, and a 35% rice polishing process, he has created a new and exceptional Junmai Daiginjo sake.
Their latest blend, No. 4, is based on the search for a near-perfect balance between the nose and the palate, with special emphasis on the finish, to achieve a refined and smooth sake, with a unique combination of aromas and an endless interplay of flavors and textures.
Served at different temperatures, it offers endless pairing possibilities, allowing it to accompany a meal from beginning to end.
